Jez you have 320mm discs with 10mm offset. The thickness or offset is measured from the inner face that touches the hub to the outer surface of the rotor. Or in other words the distance there would be between two flat boards if you sandwiched the disc between them.

Thanks! So I can't just measure with a Vernier how thick my discs are to ensure they are up to muster?

Sorry I think I misunderstood. The minimum thickness of the rotor should be stamped on the disc or carrier somewhere.
